Variations and custom attributes not working on new products

Hey,
I am struggling with variations and custom Attributes. When I try to add a new product I see for 2 seconds variations and custom Attributes (https://ibb.co/QCqNjFd), then they disappear. This is how it Looks like then: https://ibb.co/3MC8rC1.

When I try to edit a product, that has variations to it, I can see the Options but they are not really functional. I have one Attribute called size. I wanted to add Frame colour to it to sell art prints. When I go to Variations I only see generic stuff and the size Attribute but I cannot add a new Attribute (https://ibb.co/b5W8N9S). When I click on Custom Attribute I can only see this: https://ibb.co/V9XDStw and when I click on the Attributes tab Hyperlink nothing happens. And when I just click in the Dashboard on Products there are no Attributes as well: https://ibb.co/0Z61Hcf. So I cannot go to Products>Attributes, because Attributes does not exist.
